SANDY — A Sandy grandmother remains in critical condition in the intensive care unit on Wednesday after police said she was stabbed multiple times by her grandson Sunday. Friends and family are now raising money to help cover her medical costs.

Friends identified her as Isabel Coral, a longtime healthcare worker known for caring for children and families. Coral was attacked Sunday inside her apartment near 200 West and 9000 South, according to a police booking affidavit.

Melissa Tran, a friend and former coworker who worked with Coral in pediatrics, said Coral’s kindness left a lasting impression on everyone around her.

“She’s the sweetest person ever. We worked in pediatrics, and parents always asked for her,” Tran said. “She treated everyone like family.”

Police said officers found Coral with multiple stab wounds — about eight to 10 in total — inside the apartment, along with a bloodied chef’s knife. She was rushed to the hospital and underwent emergency surgery.

Details shared by Coral’s family on a GoFundMe page said the stabbing caused extensive injuries, including a punctured lung, severe damage to her spleen that required it to be removed, and a cut to her pancreas.

The family said Coral also suffered deep defensive wounds to her arm. She remains in the ICU and is expected to face a long recovery.

Investigators said Coral’s 18-year-old grandson, Andrew Miguel Gutierrez, was arrested nearby after witnesses saw him holding a knife and chased him out of the apartment. He was booked into the Salt Lake County Jail for investigation of aggravated assault resulting in serious injury and two counts of domestic violence in the presence of children.

The affidavit also states officers learned Gutierrez had recently been released from the Utah State Hospital for mental health-related treatment.

As Coral continues to fight for her life, friends and family said they are banding together to support her through recovery.

The GoFundMe* page said medical bills, follow-up care and therapy costs are expected to be significant and may not be fully covered by insurance.
