Healthy fall foods to enjoy during the holiday season

SALT LAKE CITY – Fall is the time to enjoy those popular seasonal flavors. And no, we’re not just talking about pumpkin spice. There is a variety of healthy fall foods out this time of year that can really enhance our nutrition.
In the latest Let’s Get Moving with Maria podcast episode, Maria Shilaos spoke with Frances Largeman-Roth, Registered Dietitian and New York Times Best Selling Author, to learn how we can make healthier and equally enjoyable food choices during the holiday season.

There are so many superfoods that are available to us in the fall.
Gourds are one of the most popular types of fall vegetables. It’s also one of Largeman-Roth’s favorites. These include the sugar baby pumpkin, butternut squash, and delicata squash.
“I love delicata squash because actually, you can just slice into it. You do not have to peel the delicata when you roast it … The great thing about squash like that is that it’s very rich in beta-carotene,” she said.
Beta-carotene is a necessary nutrient because it keeps our eyes healthy and strengthens our immunity.
If you’re looking for fall fruits, pomegranates are healthy, and they also add a nice bit of color to your dish. There are a couple ways to eat this. You can take out the seeds by cracking it open. You can also slice it in half and release the seeds under running water before draining it.
The remaining seeds can be used on salads, yogurt, a snack tray and more.
